Recipe Ingredients:
\n2 large eggplants, washed and dried
\nolive oil, salt and pepper (enough to pan fry the eggplant)
\n2 dozen small meatballs (baked under a broiler the day before)
\n2 Italian sausage links, (pan fried and sliced into \u00bc inch half-moons the day before)
\n1 pound gluten free penne
\n4 cups marinara sauce (1 \u00bd cups reserved for serving)
\n\u00bc cup pecorino Romano
\n1 \u00bd cups ricotta
\n1 egg
\n\u00bc cup fresh parsley
\n\u00bc tsp garlic powder
\nsalt and pepper
\n8 oz grated mozzarella (divided 4 oz & 4 oz)<\/p>\n
